Baci di Dama (translates as "lady's kisses") consist of two hazelnut cookies joined together by chocolate, representing the "kiss" in the name. They were created in the 19th Century as a way to utilize hazelnuts that are local to the Piedmont region. In 1958, Sergio Rippa and his brother Marco founded Pastecceria Rippa, a traditional bakery, in Sale, a small town in the province of Alessandria. It quickly became a destination for the most refined palates.
